Preparation of the puff pastry boats with cheese

Line the puff pastry with 8 oval tartlets, previously buttered and floured, making it adhere well to the bottom and walls.

When finished, take out of the oven and allow to cool. Take a saucepan and heat the milk with a grated nutmeg, add fontina cheese and taleggio cheese, previously cut into small pieces, then let the two cheeses melt taking care to mix frequently.

Add the yolk and stir again, adjusting the salt and removing from the heat.

Pour the mixture into the puff pastry boats and cover with the peeled onion and cut into thin slices.

Sprinkle with paprika and serve the boats while still hot.
