- 400 gr. of porcini mushrooms


- 300 gr. cottage cheese

- 300 gr. of tomato sauce

- 1 clove of garlic


- 1 bunch of basil

- parsley and thyme

- 100 gr. of parmesan


- extra virgin olive oil

- Salt and Pepper To Taste.

How to make pumpkin and mushroom parmigiana

Clean the mushrooms and cut them into slices.

Wash and slice the pumpkin lengthwise.

Put the pumpkin slices on the oven pan and cook them for about half an hour in the oven.

In the meantime, sauté the garlic in a pan and add the mushrooms, parsley, thyme, salt and pepper.

Cook until the mushrooms become tender.

Then prepare a sauce by adding a few tablespoons of mushrooms to the ricotta.

In a baking dish put a little tomato sauce and chopped basil on the bottom and add a first layer of ricotta and mushrooms sprinkling with grated Parmesan.


Continue in layers, covering with the pumpkin slices, the tomato sauce, the ricotta with the mushrooms and lastly the pumpkin garnished with the remaining porcini pieces and the Parmesan.

Bake at 180 ° C for 20 minutes.
