Russian salad shells

How to make shells stuffed with Russian salad, recipe with various types of vegetables among the necessary ingredients, easy preparation procedure and suitable for everyone.


Ingredients for 4 people

- 200 g potatoes

- 150 g carrots


- 150 g peeled peas

- 200 g of olive oil

- 2 egg yolks


- 1 boiled egg

- 4 pickled gherkins

- some pickled capers


- 1 teaspoon French mustard

- lemon juice

Preparation of Russian salad shells

Clean and wash the carrots together with the potatoes, then cut them into cubes and boil them separately in freshly salted water.

Boil the peas in lightly salted boiling water, then drain the vegetables and let them cool.

Put the two egg yolks in a bowl with a few drops of lemon juice, salt and a little ground white pepper, then beat with a metal whisk.

As soon as everything is well mixed, start adding oil a few drops at a time, continuing to mix rhythmically with the whisk.

While the sauce takes consistency, add oil until exhausted.


In the end, the sauce must be thick and homogeneous and diluted with a few drops of lemon juice.

Mix the cooked vegetables together in a salad bowl and season with two thirds of the prepared mayonnaise, to which mustard must be added.

Distribute the salad in the shells, leaving the edge uncovered, then level the surface using a blade of a knife.

Decorate with chopped gherkins, capers and a boiled egg washer.

Squeeze the remaining mayonnaise around the edge, after inserting it in the pastry bag.

Serve this preparation as an appetizer and at room temperature.
