Ingredients for 8 people

- 2 ready-made puff pastry disks (460 g)

- 400 g of fresh Sardinian ricotta


- 6 spoons of sugar

- 2 tablespoons of flaked almonds

- 1 egg yolk


- 1 tablespoon of corn starch

- 2 dl of milk

- 1 lemon


- half a sachet of vanillin

- 200 g of mixed fruit, strawberries, peaches, berries to taste

Preparation of Sardinian ricotta cheese

Unroll the puff pastry, moisten one of the discs with water and overlap the other.

With a stencil cut 8 oval doughs, brush the surface with a little warm water mixed with 2 tablespoons of sugar and distribute the almonds on it, then put in the oven already hot at 180 ° for about 15 minutes.

Prepare the cream in a saucepan, whisk the yolk with 1 tablespoon of sugar and cornstarch, then add the milk, lemon zest and vanillin.

Always stir and cook for about 10 minutes, until the cream thickens.

Turn off the stove and let cool, then remove the lemon zest and add the ricotta and the remaining sugar.

Cut the pasta ovals in half, spread the cream on the surface and distribute the pieces of fruit on top.

Close with the other half of the pasta ovals.
