Ingredients for 4 people
- 100 gr. of bottarga
- 2 small salad tomatoes
- 8 tablespoons of oil
- 1 garlic
How to make bottarga sauce
Chop the bottarga, then cut the tomato into cubes of about half a centimeter in diameter, without removing the outer skin and the inner seeds.
Put all the ingredients in a bowl, where you can also add the pasta, once cooked and drained, mix well and serve on the table while still hot.
Some advices
The fastest way to cut the diced tomato is to cut it first into slices, to overlap it to cut it into sticks which must then be further divided up to obtain the required cubes.
A little chopped parsley can also be added to this dressing, but only if fresh.
