Shrimp and cannellini beans stewed

How to cook prawns and cannellini beans by cooking them in fish broth after flavoring them with shallots and crumbled red pepper.


Ingredients for 4 people

- 300 g of prawn tails

- 250 g of cannellini beans


- 1 red chilli pepper

- 1 shallot

- extra virgin olive oil


- 10 cherry tomatoes

- parsley

- toasted croutons


- fish broth to taste

- salt and white pepper

How to prepare stewed shrimp and cannellini beans

In a saucepan with water cook the cannellini beans, then drain them.

Clean and shell the shrimp tails, keeping the scraps to make the broth.

In a saucepan with the extra virgin olive oil, brown the chopped shallot with the peeled and crushed red pepper.

Add the boiled beans and cook them and, after a while, the shelled prawn tails.

Sprinkle with chopped parsley, add the cherry tomatoes washed and cut into wedges, salt and pepper lightly.

Sprinkle with the hot broth and simmer for 10 minutes.

Adjust the flavor, add the toasted croutons and season with a drizzle of extra virgin olive oil.
