Tagliatelle with lemon sauce

How lemon noodles are made, a recipe for an original and light pasta to be served as a first course, to be prepared quickly in about 25 minutes.


Ingredients for 4 people

- 400 g of noodles

- 1 whole lemon


- 4-6 sage leaves

- 6 tablespoons of olive oil

- 2 tablespoons of flour


- 250 ml of milk

- 250 ml vegetable broth

- 125 ml of whipping cream


- 2 egg yolks

- some slices of lemon and sage leaves for decoration

Preparation

1) First of all wash the lemon with hot water, then peel the zest with the help of a scraper, alternatively obtain a thin skin and cut it into strips.

2) Squeeze the lemon

3) After washing the sage leaves, dry them well and cut them into thin strips, before frying them in boiling oil for about 3 minutes, at the end extract them with a slotted spoon.

4) At this point, cook the flour in the oil for a very short time, then add 4 tablespoons of lemon juice, half the lemon zest, the milk and the broth.


5) Cook the sauce obtained for 10 minutes, without stopping stirring.

6) Put a saucepan with salted water on the fire, calculating a generous spoonful of coarse salt for three liters of water, as soon as the water boils throw the pasta, calculating the count of the time indicated on the package since the boil starts again.

7) In the meantime, whip the cream together with the egg yolks, then add it to the still hot sauce and immediately remove from the heat.

8) Season the sauce obtained with salt and pepper.

9) When cooked, drain the pasta and distribute it on the plates together with the sauce.

10) To garnish, use the lemon zest slices, strips and sage leaves.
