How to make a vegetable and cheese salad with red and yellow peppers, lettuce, aubergine, toasted almonds and chopped robiola.
Ingredients for 4 people
- 1/2 yellow pepper
- 1/2 red pepper
- 1 eggplant
- 1 heart of lettuce
- 150 g of robiola
- 2 tablespoons of almonds
- extra virgin olive oil
- salt and pepper
How to prepare vegetable and cheese salad
Wash the peppers, dry them and grill them in the oven.
Remove from the oven and put them in a nylon bag for a few minutes, then peel them and cut them into strips.

Wash the aubergine and cut it into cubes, then sauté it in a pan with a little olive oil, salt and pepper.
Wash the lettuce, dry it and cut it into julienne strips.
Cut the almonds into strips and toast them in a non-stick pan.
In a bowl, put the lettuce, the peppers, the chopped robiola, the diced warm eggplant and the toasted almonds, mix and season with extra virgin olive oil, salt and pepper.
