Ingredients for 4 portions

- 1 spring onion

- 3 tablespoons of extra virgin olive oil


- salt and pepper

- 500 gr. of wild asparagus

- 4 eggs


- 2 tablespoons of grated Parmesan cheese

Preparation of wild asparagus pudding

Scrape the wild asparagus by removing the hardest part, then wash them carefully under tap water.

Boil them for 10 minutes in a pan with boiling salted water.


Drain them and pass them under running water to cool them, then place them on a cloth and dry them carefully before cutting them into small pieces.

Clean the spring onion and slice it finely, making it dry in a pan placed on the fire with two tablespoons of oil, without letting it gild.

In a bowl, of suitable capacity, beat the eggs with a fork, add spring onion, asparagus, Parmesan cheese, a pinch of salt and pepper, mixing enough to make all the ingredients mix well.

Pour the mixture into a cake pan, prepared greased with the remaining oil, and cook the wild asparagus pie for about 15 minutes in the preheated oven at 180 ° C.

When cooked, place it on a serving tray cut into wedges, to be served still hot.
