Beef consommé

Basic recipe for making consommé with a good broth of meat, ground beef, egg whites, celery, leek, parsley and a bunch of chervil, salt. To obtain an excellent result, it is important that cooking takes place very gently.


Ingredients for 4 people

- 1.5 l of good meat broth

- 250 g of minced beef


- 1 celery rib

- the white part of 1 leek

- 2 egg whites


- 1 bunch of parsley

- 1 bunch of chervil

- salt


How to prepare a good beef consommé

Clean all the vegetables, wash them and put them in a pot with the cold broth and all the other ingredients, excluding the egg whites.

Leave to macerate for about an hour, then put the pot on the stove and simmer for a low hour, on a very low heat.

After add the beaten egg whites.

Finally filter through a gauze or a very fine strainer the broth, in order to obtain a very narrow and bright broth.
