How to make cantuccini di Prato, an original recipe with almonds, typical of the Tuscan city, to be baked in the oven and including, among the ingredients, eggs and orange essence.


Ingredients for 6 portions

- 3 eggs

- 3 egg yolks


- A sachet of yeast

- Orange essence

- Flour gr. 400


- Sugar gr. 250

- Shelled almonds gr. 150

- Little salt


How the cantuccini of Prato are prepared

Whisk well 2 eggs and the yolks with the sugar, then add the flour, baking powder, a few drops of orange essence and a pinch of salt.

Lightly toast the unpeeled almonds and, once cold, add to the dough.

With the dough, make 3-finger wide loaves and a finger high.

Place them on a well-spaced buttered and floured baking tray, brush them with a beaten egg and bake in the medium oven for about 15 minutes.

Remove them from the oven and with a knife cut them sideways to obtain the typical biscuits.

Put them back in the oven for about ten minutes to make them biscuit.
