- 500 gr of sheep's ricotta

- 250 g of flour


- 200 gr of spinach

- gr 100 of Parmesan cheese

- 2 eggs


- salt and nutmeg

How to make green gnocchi with ricotta and spinach

After boiling the spinach, squeeze it and finely chop it in the mill.

Add the ricotta, the whole beaten eggs with the grated Parmesan, the salt, the nutmeg and the flour to the spinach.

Knead the dough and with the help of the flour form a long and thin sfilatino to be cut into small cylinders.

Boil the gnocchi in abundant salted water and season them to taste.
