Ingredients for 4 people

- 3 yolks

- 750 cl of milk


- 150 gr. shelled almonds

- half a teaspoon of meat extract

- salt


Preparation of the almond cream

Put the 3 yolks together with 3 tablespoons of milk in the bottom of a bowl and mix everything to mix well.

Chop the almonds meticulously, they must become almost powder, put them in a saucepan, adding the remaining milk very slowly.

Place the saucepan on the stove on a medium heat, add salt and boil, stirring constantly and, as soon as the milk is hot, melt the meat extract together.

Once the boiling is about to begin, remove the cream from the heat by pouring it into the bowl, gradually and mixing well to make sure that no large lumps form.
