Ingredients for 4 people

- 250 gr egg noodles

- 2 small courgettes


- 400 gr cleaned and sliced ​​champignon mushrooms

- 2 tablespoons of extra virgin olive oil

- 1 tablespoon of chopped parsley


- 1 clove of garlic

- 2 eggs

- 70 gr grated Parmesan cheese


- salt and pepper

Preparation of tagliatelle cake

Check the courgettes, wash them and cut them into four parts, lengthwise, then slice them so as to obtain many triangles.

Rinse the mushrooms and prepare a fairly large pan, where you can heat the oil together with the parsley and peeled and crushed garlic.

Add the courgettes and brown them, then add the mushrooms, leaving to cook on high heat for about 2 minutes.

Salt, pepper and cook for another 10 minutes on low heat, until the vegetables have become tender, then remove the garlic residues.

While the vegetables are cooking, boil the noodles and drain when they are still al dente, then pass them in the pan with the sauce, stirring to flavor everything, then turn off the heat and leave to cool for a few minutes.

Beat the eggs in a bowl together with half of the Parmesan, a pinch of salt and pepper, then add the seasoned tagliolini, mixing well.

Line a cake pan with moist parchment paper and spread the mixture over the noodles, sprinkle the surface with the remaining Parmesan cheese, then put in the preheated oven at 180 ° C and cook for 20 minutes.
