Warm octopus salad with potatoes and parsley

How to make an octopus salad with boiled potatoes, a recipe to be served lukewarm and seasoned with extra virgin olive oil and chopped parsley, flavored with lemon juice.


Ingredients for 4 people

- White wine vinegar

- 3 medium potatoes


- extra virgin olive oil

- 1 lemon

- 2 octopuses of about 700 g


- 1 bay leaf

- 1 bunch of parsley

- salt and pepper


Preparing octopus salad with potatoes

After cleaning and washing the octopuses, put them in a saucepan with cold water, containing the bay leaf, a few stalks of parsley and a drop of vinegar.

Bring to the boil and calculate about 35 minutes for cooking, then let it cool.

Boil the peeled potatoes in abundant salted boiling water, calculating about 30 minutes after boiling again, then pass them under cold water, peel them and cut them into slices.

Once cooked, drain the octopuses and rinse them under running water, in the meantime removing the larger suckers.

Cut them into small pieces and transfer them to a serving dish, add the potatoes and sprinkle with the rest of the chopped parsley, finally season with oil, filtered lemon juice, salt and pepper.
