How to make veal roast, a recipe in olive oil with rosemary and flavoring to be cooked in the oven with a side dish of potatoes and sage.
Ingredients for 4 portions

Roast veal preparation in the oven
Prepare the meat, tie it with string and insert the sprigs of rosemary and sage leaves under the binding, then pass the salt over the entire surface.
Peel the potatoes and cut them into chunks, place them in a pan, salt them and sprinkle them with the roasted aromas and olive oil.
Put the piece of meat sprinkled with olive oil in a measuring pan and bake at 200 ° C in an already hot oven.
Also bake the pan with the potatoes. After about half an hour, remove the pan with the potatoes, mix them and continue cooking for another 45 minutes.
At this point the potatoes will be cooked, while the cooking of the meat will be checked by pricking it with a fork, if pinkish liquid should come out, cooking will continue for a few more minutes, considering that the cooking times are one hour and 15 minutes for each Kg . of meat.
When cooked, remove the roast from the oven, wrap it with aluminum foil and let it rest for a while before cutting it into slices.
Serve it with the cooking sauce and the potatoes kept warm in the semi-open oven.
