Pork fillet with fresh plums

How to cook pork fillet with fresh plums, a second dish with a refined taste that is prepared by marinating the meat with extra virgin olive oil, garlic, juniper berries, clove and bay leaf.


Ingredients for 6 people

- 700 g of pork tenderloin

- 1 clove


- 5-6 juniper berries

- 1 bay leaf

- 1 clove of garlic


- 3 tablespoons of extra virgin olive oil

- 350 g of red plums

- 1 teaspoon of sugar


- 1/2 glass of white wine

- salt and pepper

How to prepare pork fillet with fresh plums

Degrease the pork tenderloin, salt and pepper it.

Make a mince by pounding the clove, the juniper berries and the garlic clove.

Put the fillet in a container, rub it with the chopped spices and the extra virgin olive oil, add the bay leaf and let it marinate for about 3 hours, turning the meat occasionally.

Meanwhile, wash and cut the plums in half, peel them and dip them in boiling water for 1 minute.

Place the fillet in a pan and brown it over high heat on all sides, then pour the white wine and let it evaporate, add the plums, sugar and a little water.

Leave the meat to cook covered for about 40 minutes.

Remove the meat from the pan and keep it warm.


Blend the cooking juices, season with salt and pepper, put the sauce back in the pan and boil it for 2 minutes.

At this point, cut the pork tenderloin into slices, arrange them on a tray and pour the plum sauce on top.

Serve on a hot table.
