Sweet rice pancakes with raisins

How to cook sweet rice fritters with raisins, a recipe for frying in a pan that includes, among the ingredients, lemon zest and milk.


Ingredients for 6 portions

- Sugar

- Butter: gr. 30


- Lemon peel

- Raisins: gr. 50

- A glass of liqueur


- Rice gr. 150

- Half liter of milk

- 2 tablespoons of flour


- 2 eggs

- Half a sachet of yeast

Preparation of sweet rice pancakes with raisins

Boil the milk with a glass of water, 2 tablespoons of sugar, a pinch of salt, butter and a lemon zest.

Throw in the rice (like “originari o”, or at least not parboiled) and cook it very much, until the liquid is absorbed.

Remove from the heat and let everything cool down.

Then add the flour, the egg yolks, a teaspoon of grated lemon zest, a glass of liqueur (usually rum, but marsala or brandy or vin santo are also fine), the yeast and the soaked raisins.

Leave to rest for an hour then add the whipped whites.


Fry the mixture immediately, by spoonfuls, in a pan with plenty of boiling oil.

When they are well colored, put them to dry on a sheet of kitchen paper and sprinkle them with a lot of sugar.
