Tuscan leek soup without potatoes

How to make Tuscan leek soup, ripe tomatoes and olive oil, a simple Tuscan recipe without potatoes, also possible with onions as an alternative as a main ingredient, easy to cook.


Ingredients for 4 people

- half a kilo of onions (or half a kilo of leeks)

- 1 ripe tomato


- a few slices of homemade bread

- a knob of butter

- olive oil


- salt and pepper

How to prepare the Tuscan leek soup

Slice the white of the onions, brown them in oil, a knob of butter, salt and pepper.

Add a liter of broth and the peeled and seedless tomato, boil for about 30 minutes.


Put the slices of toasted bread in a bowl and pour over the broth with the onions and raw olive oil.

It is served after about ten minutes.
