Grilled eggplants with mint seasoned with oil


How to make and season grilled eggplants with mint leaves, recipe for a simple side dish to be prepared quickly and easily.

Ingredients for 4 people

- 1 clove of garlic

- extra virgin olive oil

- 300 g of grilled aubergines

- 1 sprig of mint

- salt

Preparation grilled eggplants with mint

Clean, wash, slice, dry and then grill the aubergines on the plate.

Peel the garlic and cut it into thin slices.

Take a shallow container, make a first layer of aubergines, salt, put a few mint leaves and 1-2 slices of garlic, season with oil, then make other layers of aubergine, seasoning each layer in the same way.

At the end cover with a veil of oil and seal with a sheet of plastic wrap, leaving to rest in the fridge for a day.
